Dolomite is a sedimentary rock, a close cousin to limestone. If limestone turns into a metamorphic rock, it becomes marble. If dolomite turns into a metamorphic rock, it becomes dolomitic marble. Saying dolomite isn't marble doesn't really make sense, but that's ok. One needn't be a geologist to understand basic stone properties.
Super White is dolomitic marble, not quartzite. Dolomitic marble etches a little more slowly than regular marble. As for getting a sample of your actual slab, that seems a little unlikely, but certainly worth asking. You'll probably have better odds of getting a sample from the same batch, but a remnant or scrap from a previous job.
